Ingredients for the Crust:
- 2 medium sweet potatoes, peeled and sliced into thin rounds
- 1 tablespoon olive oil
- Salt and pepper to taste
Ingredients for the Filling:
- 6 large eggs
- 1/2 cup milk or a milk alternative
- 1 cup fresh spinach, roughly chopped
- 1/2 cup grated cheese (such as cheddar or feta)
- 1/2 cup diced ham or cooked bacon (optional)
- 1/4 cup red bell pepper, diced
- Salt and pepper to taste
Instructions:
- Preheat your oven to 375°F (190°C).
- Lightly grease a 9-inch pie dish and layer the sweet potato slices in an overlapping pattern across the bottom and up the sides of the dish to form a crust. Brush the sweet potato slices with olive oil and season with salt and pepper.
- Bake the sweet potato crust for about 20 minutes or until the edges are slightly crispy.
- In the meantime, in a large mixing bowl, whisk together the eggs and milk. Stir in the spinach, cheese, ham (if using), and diced bell pepper. Add salt and pepper to taste.
- Once the sweet potato crust is pre-baked, pour the egg mixture into the crust.
- Lower the oven temperature to 350°F (175°C) and bake the quiche for 30-40 minutes, or until the egg mixture is set and the top is lightly golden brown.
- Allow the quiche to cool slightly before slicing and serving.
