Gluten-Free Spiced Car Cake using Schär Gluten-Free All-Purpose Flour

Ingredients:

  • 2 cups Schär Gluten-Free All-Purpose Flour Blend
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 salt
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ground cardamom
  • 3/4 cup vegetable oil
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 4 large eggs
  • 2 cups grated carrots (about 4 medium carrots)
  • 1/2 cup crushed pineapple, drained
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts (optional)

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a large bowl, whisk together the Schär Gluten-Free Flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, cloves, and cardamom.
  3. In another bowl, beat the vegetable oil, brown sugar, and granulated sugar until well combined. Add the eggs, one at a time, beating well after each addition.
  4. Mix in the grated carrots, crushed pineapple, and vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined. Gently fold in the walnuts, if using.
  6. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the centers comes out clean.
  7. Let cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.

For the frosting:

  1. Beat the cream cheese and butter together until smooth.
  2. Gradually add the powdered sugar, mixing until creamy.
  3. Beat in the vanilla extract.

Once the cakes are cooled, frost with the cream cheese frosting. If desired, sprinkle with additional walnuts or cinnamon.
