Ingredients:

- 2 cups Antimo Caputo Gluten-Free Pizza Flour
- 1 cup warm water (between 100°F-110°F)
- 1 packet (2 1/4 teaspoons) instant yeast
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 tablespoon olive oil
For the BBQ Chicken Toppings:
- 1/2 cup BBQ sauce (plus extra for drizzling)
- 1 cup cooked chicken breast, diced or shredded
- 1/2 cup red onion, thinly sliced
- 1/2 cup smoked gouda cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon olive oil (for brushing)
Instructions:
- Prepare the gluten-free pizza dough: In a large bowl, whisk together the warm water, instant yeast, and sugar. Let sit for 5 minutes until the mixture becomes frothy.
- Add the Antimo Caputo Gluten-Free Pizza Flour, salt, and olive oil to the yeast mixture. Stir until a dough forms. Knead the dough on a gluten-free floured surface for 3-4 minutes.
- Shape the dough into a ball and place it in an oiled bowl. Cover with a clean kitchen towel and let it rise in a warm place for about 30 minutes, until it doubles in size.
- Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat.
- On a piece of parchment paper, press the dough out to form a 12 to 14-inch pizza crust.
- Lightly brush the dough with olive oil and then evenly spread the BBQ sauce on top as the base of your pizza.
- Scatter the cooked chicken over the sauce, followed by the sliced red onion.
- Mix the smoked gouda and mozzarella cheeses together, and sprinkle them over the toppings.
- Transfer the pizza with the parchment paper onto the preheated pizza stone or a baking sheet.
- Bake for 12-15 minutes, or until the cheese is melted and bubbly and the crust is golden brown.
- Remove from the oven and let cool for a couple of minutes. Drizzle with additional BBQ sauce and sprinkle chopped cilantro on top.
