Gluten-Free Smoky BBQ Chicken Pizza

Ingredients:

For the Gluten-Free Pizza Dough:

  • 2 cups Antimo Caputo Gluten-Free Pizza Flour
  • 1 cup warm water (between 100°F-110°F)
  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 tablespoon olive oil

For the BBQ Chicken Toppings:

  • 1/2 cup BBQ sauce (plus extra for drizzling)
  • 1 cup cooked chicken breast, diced or shredded
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup smoked gouda cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon olive oil (for brushing)

Instructions:

  1. Prepare the gluten-free pizza dough: In a large bowl, whisk together the warm water, instant yeast, and sugar. Let sit for 5 minutes until the mixture becomes frothy.
  2. Add the Antimo Caputo Gluten-Free Pizza Flour, salt, and olive oil to the yeast mixture. Stir until a dough forms. Knead the dough on a gluten-free floured surface for 3-4 minutes.
  3. Shape the dough into a ball and place it in an oiled bowl. Cover with a clean kitchen towel and let it rise in a warm place for about 30 minutes, until it doubles in size.
  4. Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat.
  5. On a piece of parchment paper, press the dough out to form a 12 to 14-inch pizza crust.
  6. Lightly brush the dough with olive oil and then evenly spread the BBQ sauce on top as the base of your pizza.
