Ingredients:
For the Gluten-Free Pizza Dough:
- 2 cups gluten-free pizza flour
- 1 cup warm water (around 110°F)
- 1 packet instant yeast (approximately 2 1/4 teaspoons)
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 tablespoon olive oil
For the Filling:
- 4 ounces smoked salmon, sliced into small pieces
- 1/2 cup cream cheese, softened
- 1 tablespoon capers, drained
- 1/2 small red onion, thinly sliced
- 1 handful of fresh dill, chopped
- 1 teaspoon lemon zest
- Juice of 1/2 lemon
- Freshly ground black pepper to taste
Instructions:
- In a bowl, mix the warm water, yeast, and sugar. Let it rest until the mixture becomes foamy, usually takes 5 minutes.
- Add the gluten-free pizza flour and salt to the yeast mixture. Combine into a dough, then knead in the olive oil until the dough is smooth, adding more flour if the mixture is too sticky. Allow the dough to rise covered for about 30 minutes.
- While the dough is resting, combine the cream cheese, capers, red onion, dill, lemon zest, lemon juice, and black pepper in a bowl. Mix well.
- Preheat your oven to 475°F (245°C). If you’re using a pizza stone, place it in the oven to heat up.
- Split the dough into halves and roll each into a circle on a surface lined with parchment paper.
- Spread the cream cheese mixture on one half of each dough circle. Add smoked salmon slices on top.
- Fold the dough over to create a half-moon shape. Crimp the edges to seal in the filling.
- Transfer the calzones on the parchment paper to the preheated pizza stone or a baking sheet.
- Bake in the oven for 15-20 minutes until the calzones are golden brown and the dough is cooked through.
- Remove from the oven and let cool for a couple of minutes.
- Serve the calzones warm, and enjoy!
