Gluten-Free Seedy Oat Crackers Recipe

Ingredients:

  • 1 cup certified gluten-free oats
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 3 tablespoons sesame seeds
  • 2 tablespoonsia seeds
  • 1 tablespoon poppy seeds
  • 2 tablespoons nutritional yeast
  • 1/2 teaspoon salt
  • 1/4 cup olive oil
  • 2 tablespoons maple syrup
  • 3/4 cup room temperature water

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the oats, pumpkin seeds, sunflower seeds, sesame seeds, chia seeds, poppy seeds, nutritional yeast, and salt. Mix well.
  3. In a medium bowl, whisk together the olive oil, maple syrup, and water.
  4. Pour the liquid mixture over the seed and oat mixture, stirring until everything is thoroughly combined and the mixture begins to stick together.
  5. Spread the mixture onto a baking sheet lined with parchment paper. Place another sheet of parchment on top and use a rolling pin to flatten the mixture to your desired thickness, aiming for an even layer.
  6. Remove the top layer of parchment paper and score the mixture with a knife into cracker-sized pieces.
  7. Bake in the preheated oven for 15-20 minutes or until the edges are golden brown and the crackers are crisp.
  8. Let them cool on the baking sheet for a few minutes before breaking them apart along the scored lines.
  9. Once completely cooled, store the crackers in an airtight container.
