Ingredients:
- 1 cup certified gluten-free oats
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 3 tablespoons sesame seeds
- 2 tablespoonsia seeds
- 1 tablespoon poppy seeds
- 2 tablespoons nutritional yeast
- 1/2 teaspoon salt
- 1/4 cup olive oil
- 2 tablespoons maple syrup
- 3/4 cup room temperature water
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the oats, pumpkin seeds, sunflower seeds, sesame seeds, chia seeds, poppy seeds, nutritional yeast, and salt. Mix well.
- In a medium bowl, whisk together the olive oil, maple syrup, and water.
- Pour the liquid mixture over the seed and oat mixture, stirring until everything is thoroughly combined and the mixture begins to stick together.
- Spread the mixture onto a baking sheet lined with parchment paper. Place another sheet of parchment on top and use a rolling pin to flatten the mixture to your desired thickness, aiming for an even layer.
- Remove the top layer of parchment paper and score the mixture with a knife into cracker-sized pieces.
- Bake in the preheated oven for 15-20 minutes or until the edges are golden brown and the crackers are crisp.
- Let them cool on the baking sheet for a few minutes before breaking them apart along the scored lines.
- Once completely cooled, store the crackers in an airtight container.
