Ingredients:

  • 1/2 cup pizza sauce or tomato sauce
  • 1 cup crumbled goat cheese

Instructions:

  1. Preheat your oven to 400°F (200°C). On a baking sheet, toss the zucchini, yellow squash, red bell pepper, and red onion with 1 tablespoon of olive oil, salt, and pepper. Roast the veggies in the oven for about 15-20 minutes until tender and lightly caramelized. Remove the veggies from the oven and set aside.
  2. Increase the oven temperature to 475°F (245°C).
  3. For the dough, combine warm water, yeast, and sugar in a bowl. Allow it to sit until frothy, about 5 minutes.
  4. Add gluten-free pizza flour, salt, and olive oil to the bowl. Stir until a dough starts to form. If the dough is too sticky, add a little more flour until it comes together but is still soft.
  5. Let the dough rest, covered, for about 30 minutes in a warm place.

  7. Spread pizza sauce over the dough, leaving a border for the crust.
  8. Distribute the roasted vegetables evenly on top of the sauce.
  9. Sprinkle crumbled goat cheese over the vegetables and season with Italian herbs.
  10. Drizzle the remaining 1 tablespoon of olive oil over the pizza.
