Roast the veggies in the oven for about 15-20 minutes until tender and lightly caramelized. Remove the veggies from the oven and set aside.
- Increase the oven temperature to 475°F (245°C).
- For the dough, combine warm water, yeast, and sugar in a bowl. Allow it to sit until frothy, about 5 minutes.
- Add gluten-free pizza flour, salt, and olive oil to the bowl. Stir until a dough starts to form. If the dough is too sticky, add a little more flour until it comes together but is still soft.
- Let the dough rest, covered, for about 30 minutes in a warm place.
- On a sheet of parchment paper, roll out the rested dough to your desired thickness.
- Spread pizza sauce over the dough, leaving a border for the crust.
- Distribute the roasted vegetables evenly on top of the sauce.
- Sprinkle crumbled goat cheese over the vegetables and season with Italian herbs.
- Drizzle the remaining 1 tablespoon of olive oil over the pizza.
- Transfer the pizza with parchment paper onto a preheated pizza stone or baking sheet.
- Bake for 12-15 minutes until the crust is golden and the cheese has melted.
- Remove the pizza from the oven, let it cool slightly, and serve.
