Ingredients for Gluten-Free Pizza Dough:

  • 1 cup warm water (around 110°F)
  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 tablespoon olive oil

Ingredients for Roasted Vegetables:

  • 1 small zucchini, sliced
  • 1 red bell pepper, diced
  • 1 small eggplant, diced
  • 1 medium red onion, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Ingredients for Toppings:

  • 1/2 cup goat cheese, crumbled
  • 1/4 cup pesto sauce (ensure it’s gluten-free)
  • Fresh arugula for garnish
  • Balsamic glaze for drizzling

Instructions:

  1. Preheat your oven to 425°F (220°C). Toss the zucchini, bell pepper, eggplant, and red onion with olive oil, salt, and pepper, and spread them on a baking sheet. Roast for about 20 minutes or until vegetables are tender and slightly caramelized. Set aside to cool.
