Instructions:
- Preheat your oven to 425°F (220°C). Toss the zucchini, bell pepper, eggplant, and red onion with olive oil, salt, and pepper, and spread them on a baking sheet. Roast for about 20 minutes or until vegetables are tender and slightly caramelized. Set aside to cool.

- Spread the pizza dough onto parchment paper, forming a 12-inch circle or your desired shape.
- Spread the pesto sauce over the dough, then distribute the roasted vegetables evenly on top.
- Crumble the goat cheese onto the pizza.
- Transfer the pizza with the parchment paper onto the preheated pizza stone or a baking sheet.
- Bake the pizza for 12-15 minutes, or until the crust is golden and the toppings are heated through.
- Remove the pizza from the oven, then top with fresh arugula and drizzle with balsamic glaze before serving.
