Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, chopped
- 1 bell pepper, chopped
- 1/4 cup red onion, finely diced
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Feta cheese, crumbled (optional)
Instructions:
- In a saucepan, bring the quinoa and water to a boil. Reduce heat, cover, and simmer for 15 minutes.
- Once cooked, fluff the quinoa with a fork and let it cool.
- In a large bowl, combine cooled quinoa, tomatoes, cucumber, bell pepper, onion, and parsley.
- Whisk together olive oil, lemon juice, salt, and pepper to create a dressing.
- Toss the salad with the dressing and top with crumbled feta, if desired.
