Gluten-Free Nicoise-Inspired Tuna Pizza

Ingredients:

For the Gluten-Free Pizza Dough:

  • 2 cups gluten-free pizza flour
  • 1 cup warm water (approximately 110°F)
  • 1 packet instant yeast (about 2 1/4 teaspoons)
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 tablespoon olive oil

For the Toppings:

  • 1 can (5-7 oz) tuna in olive oil, drained and flaked
  • 1/2 cup tomato sauce or homemade marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup cherry tomatoes, halved
  • 1/2 small red onion, thinly sliced
  • 1/4 cup black olives, sliced
  • 2 tablespoons capers, drained
  • 4 hard-boiled eggs, sliced
  • A handful of green beans, blanched and cooled
  • Fresh basil leaves for garnish
  • Anchovy fillets (optional)
  • Drizzle of extra virgin olive oil
  • Salt and pepper to taste

Instructions:

  1. Combine the warm water, instant yeast, and sugar in a bowl and let it sit until frothy, about 5 minutes.
  2. Add the gluten-free pizza flour and salt, then mix until a dough starts to form. Knead in the olive oil until the dough is smooth. If the dough is too sticky, add a bit more flour. Let the dough rest, covered, for approximately 30 minutes.
  3. Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat.
  4. Roll out the dough on top of parchment paper to your desired thickness.
  5. Spread the tomato sauce over the dough, leaving a border for the crust. Add the mozzarella cheese evenly on top.
  6. Distribute flaked tuna, cherry tomatoes, red onion slices, black olives, and capers across the pizza.
  7. Bake on a preheated pizza stone or on a baking tray for 12-15 minutes until the crust is golden and the cheese is bubbly.
  8. Once out of the oven, arrange the sliced hard-boiled eggs, blanched green beans, and anchovy fillets (if using) on top.
  9. Garnish with fresh basil, drizzle with extra virgin olive oil, and season with salt and pepper.
