Ingredients:
For the Gluten-Free Pizza Dough:
- 2 cups gluten-free pizza flour
- 1 cup warm water (approximately 110°F)
- 1 packet instant yeast (about 2 1/4 teaspoons)
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 tablespoon olive oil
For the Toppings:
- 1 can (5-7 oz) tuna in olive oil, drained and flaked
- 1/2 cup tomato sauce or homemade marinara sauce
- 1/2 cup shredded mozzarella cheese
- 1/2 cup cherry tomatoes, halved
- 1/2 small red onion, thinly sliced
- 1/4 cup black olives, sliced
- 2 tablespoons capers, drained
- 4 hard-boiled eggs, sliced
- A handful of green beans, blanched and cooled
- Fresh basil leaves for garnish
- Anchovy fillets (optional)
- Drizzle of extra virgin olive oil
- Salt and pepper to taste
Instructions:
- Combine the warm water, instant yeast, and sugar in a bowl and let it sit until frothy, about 5 minutes.
- Add the gluten-free pizza flour and salt, then mix until a dough starts to form. Knead in the olive oil until the dough is smooth. If the dough is too sticky, add a bit more flour. Let the dough rest, covered, for approximately 30 minutes.
- Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat.
- Roll out the dough on top of parchment paper to your desired thickness.
- Spread the tomato sauce over the dough, leaving a border for the crust. Add the mozzarella cheese evenly on top.
- Distribute flaked tuna, cherry tomatoes, red onion slices, black olives, and capers across the pizza.
- Bake on a preheated pizza stone or on a baking tray for 12-15 minutes until the crust is golden and the cheese is bubbly.
- Once out of the oven, arrange the sliced hard-boiled eggs, blanched green beans, and anchovy fillets (if using) on top.
- Garnish with fresh basil, drizzle with extra virgin olive oil, and season with salt and pepper.
