Instructions:
- Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, ensuring it covers both sides for easy removal.
- In a large mixing bowl, combine the gluten-free rolled oats, mixed seeds, and dried fruit.
- In a small saucepan over medium heat, combine the honey or maple syrup, nut butter, and coconut oil. Stir until the mixture is fully combined and slightly heated. Remove from heat and add vanilla extract.
- Pour the wet ingredients into the dry ingredients. Add ground cinnamon and salt. Mix thoroughly until everything is well coated. If you’re using chocolate chips, let the mixture cool slightly before mixing them in to prevent melting.
- Transfer the mixture to the prepared baking pan. Press firmly into an even layer, compressing the mixture as much as possible to help ensure that the bars hold together after cooling.
- Bake for 15-20 minutes, or until the edges start to turn golden brown.
- Remove from the oven and allow the muesli bars to cool in the pan. Once cooled, use the parchment paper to lift them out and cut them into bars.
- Store the muesli bars in an airtight container for up to a week.
