- Lemon wedges, for serving
Instructions:

To make the dough, in a bowl, combine warm water, yeast, and sugar. Set aside until it becomes foamy, about 5 minutes.

Add the gluten-free pizza flour and salt to the yeast mixture. Mix until a dough begins to form. Drizzle in the olive oil and knead the dough until smooth. If the dough is too sticky, add a bit more flour. Cover the dough and let it rise in a warm place for about 30 minutes.

Preheat your oven to 475°F (245°C). If you have a pizza stone, place it inside to heat up.

Roll out the dough on top of parchment paper to your desired thickness.

Spread the pizza sauce over the dough evenly, leaving a border.

Sprinkle the mozzarella cheese on top of the sauce, and then add the flaked tuna, Kalamata olives, artichoke hearts, capers, and red onion slices.

Transfer the pizza with the parchment paper onto the heated pizza stone or a baking sheet.

Bake for 12-15 minutes, until the crust is golden and cheese is melted.

Remove the pizza from the oven, and top with fresh arugula or spinach leaves, crumbled feta, and a sprinkle of dried oregano.
