Gluten-Free Mediterranean Chickpea Pizza

Ingredients:

For the Gluten-Free Pizza Dough:

  • 2 cups Schar Gluten-Free Pizza Flour
  • 1 cup warm water (around 110°F)
  • 1 packet instant yeast (approximately 2 1/4 teaspoons)
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 tablespoons olive oil

For the Toppings:

  • 1 cup hummus (homemade or store-bought, check for gluten-free)
  • 1 cup cooked chickpeas (garbanzo beans)
  • 1/2 cup artichoke hearts, drained and chopped
  • 1/2 cup roasted red peppers, sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 cup feta cheese, crumbled
  • 1 teaspoon dried oregano
  • Fresh parsley, chopped for garnish
  • Extra virgin olive oil for drizzling
  • Fresh lemon zest for finishing touch

Instructions:

  1. In a mixing bowl, combine warm water, yeast, and sugar. Allow it to sit for a few minutes until the yeast is activated and frothy.
  2. Add Schar Gluten-Free Pizza Flour, salt, and olive oil to the yeast mixture. Mix until a dough starts to form. Knead the dough for a few minutes, then let it rise, covered, in a warm place for about 30 minutes.
  3. Preheat your oven to 475°F (245°C). If you have a pizza stone, put it in the oven to warm.
  4. Roll out the pizza dough on a sheet of parchment paper into your desired shape.
  5. Spread hummus evenly as the base layer on the dough.
  6. Scatter cooked chickpeas, artichoke hearts, roasted red peppers, and Kalamata olives over the hummus.
  7. Sprinkle with crumbled feta cheese and dried oregano.
  8. Drizzle with a little olive oil, then transfer the parchment paper and pizza onto the preheated pizza stone or directly onto a baking tray.
  9. Bake for 12-15 minutes, until the edges are golden brown and the toppings are heated through.
  10. Garnish with fresh parsley and lemon zest after removing from the oven.
  11. Let cool slightly before slicing. Serve and enjoy your Gluten-Free Mediterranean Chickpea Pizza.
