Instructions:
- Begin by preparing your gluten-free pizza dough. Mix the warm water, yeast, and sugar in a large bowl and let it sit for about 5 minutes, until the yeast is activated and frothy.
- Add the Antimo Caputo Gluten-Free Pizza Flour, salt, and olive oil to the yeast mixture. Stir and knead until a soft dough forms. If the dough is too sticky, add a little more flour; if it’s too dry, add a bit more water.
- Let the dough rise, covered, in a warm place for 30 minutes.
- Preheat the oven to 475°F (245°C). If you have a pizza stone, place it in the oven now.
- On a piece of parchment paper, roll out the dough to form a thin pizza base.
- Spread the tomato sauce over the base, and sprinkle with oregano.
- Arrange artichoke hearts, Kalamata olives, roasted red peppers, and red onion evenly over the sauce.
- Sprinkle with crumbled feta and shredded mozzarella cheese.
- Slide the pizza (with the parchment paper) onto the preheated pizza stone or a baking tray.
- Bake for about 12-15 minutes or until the pizza crust is golden and the cheese is melted and slightly browned.
- Remove from the oven, garnish with fresh basil leaves, and drizzle with a little extra virgin olive oil.
