Gluten-Free Meatball Soup Recipe

Ingredients:

For the Meatballs:

  • 1 lb ground beef or ground turkey
  • 1/4 cup gluten-free breadcrumbs or almond flour
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

For the Soup:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups gluten-free chicken or beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • 2 cups baby spinach or chopped kale
  • Salt and pepper to taste

Instructions:

  1. Prepare the Meatballs:
    • In a bowl, mix together the ground meat, gluten-free breadcrumbs or almond flour, egg, oregano, garlic powder, salt, and pepper.
    • Form into small meatballs, about 1 inch in diameter.
  2. Brown the Meatballs:
    • In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the meatballs and brown them on all sides. Once browned, remove them from the pot and set aside.
  3. Cook the Vegetables:
    • Add the remaining tablespoon of olive oil to the pot. Add the onion, carrots, and celery, and cook until the vegetables begin to soften, about 5 minutes.
    • Stir in the minced garlic and cook for another minute until fragrant.
  4. Combine Soup Ingredients:
    • Pour in the gluten-free broth, diced tomatoes with their juice, basil, thyme, and bay leaf. Bring the soup to a simmer.
  5. Add Meatballs:
    • Return the meatballs to the pot. Simmer for about 15 minutes, or until the meatballs are cooked through.
  6. Finish the Soup:
    • Add the baby spinach or chopped kale and cook until the greens are wilted and tender.
    • Season with salt and pepper to taste. Remove the bay leaf before serving.
  7. Serve:
    • Ladle the soup into bowls, making sure each serving has a good number of meatballs and vegetables.
