Ingredients:
- 1 1/2 cups gluten-free all-purpose flour blend
- 1 tablespoon sugar
- 1 tablespoon baking powder
- 1/2 teaspoon
- 11/4 cups (dairy or non-dairy alternative)
- 1 large egg
- 3 tablespoons unsalted butter, melted (or vegetable oil for dairy-free)
- 1 teaspoon vanilla extract
Instructions:
- In a large bowl, mix together the gluten-free all-purpose flour, sugar, baking powder, and salt until well combined.
- In another bowl, whisk the milk, egg, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and whisk until just combined. Let the batter rest for a few minutes; it may thicken slightly.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil if necessary.
- Pour 1/4 cup portions of the batter onto the hot skillet. Cook until bubbles form on the top of the pancakes and the edges look set, about 2-3 minutes.
- Flip the pancakes and cook for another 2 minutes on the other side, or until golden brown.
- Serve the pancakes warm with your choice of syrup, fruit, or other toppings.
