Ingredients:
- 100g gluten-free plain flour
- 50g cocoa powder
- 250g unsalted butter, melted (or dairy-free alternative)
- 250g chocolate, mix of dark and milk (dairy-free if necessary), chopped
- 4 medium eggs
- 280g caster sugar
Instructions:
- Preheat the oven to 350°F (175°C). Grease and line an 8-inch (20 cm) square baking pan with parchment paper.
- In a medium bowl, sift together the gluten-free flour and cocoa powder. Set aside.
- In a separate large bowl, melt the butter and chocolate together. You can do this in the microwave in 30-second bursts, stirring in between, or using a double boiler on the stove.
- Once the chocolate and butter mixture is smooth, let it cool slightly, then add the caster sugar. Stir well.
- Beat in the eggs, one at a time, mixing until each one is fully incorporated before adding the next.
- Gradually fold in the flour and cocoa mixture until just combined. Do not overmix.
- Pour the brownie batter into the prepared pan and smooth the top with a spatula.
- Bake in the preheated oven for about 20-25 minutes or until the top has a shiny, papery crust and the sides are just beginning to pull away from the pan. The center should still be a little gooey.
- Remove from the oven and allow the brownies to cool in the pan. Once cooled, cut into squares.
