Gluten-Free Chocolate Brownies

Ingredients:

  • 100g gluten-free plain flour
  • 50g cocoa powder
  • 250g unsalted butter, melted (or dairy-free alternative)
  • 250g chocolate, mix of dark and milk (dairy-free if necessary), chopped
  • 4 medium eggs
  • 280g caster sugar

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and line an 8-inch (20 cm) square baking pan with parchment paper.
  2. In a medium bowl, sift together the gluten-free flour and cocoa powder. Set aside.
  3. In a separate large bowl, melt the butter and chocolate together. You can do this in the microwave in 30-second bursts, stirring in between, or using a double boiler on the stove.
  4. Once the chocolate and butter mixture is smooth, let it cool slightly, then add the caster sugar. Stir well.
  5. Beat in the eggs, one at a time, mixing until each one is fully incorporated before adding the next.
  6. Gradually fold in the flour and cocoa mixture until just combined. Do not overmix.
  7. Pour the brownie batter into the prepared pan and smooth the top with a spatula.
  8. Bake in the preheated oven for about 20-25 minutes or until the top has a shiny, papery crust and the sides are just beginning to pull away from the pan. The center should still be a little gooey.
  9. Remove from the oven and allow the brownies to cool in the pan. Once cooled, cut into squares.
