Gluten-Free Chicken and Rice Meatballs With Hummus

Ingredients:

For the Chicken and Rice Meatballs:

  • 1 pound ground chicken
  • 1 cup cooked white rice (ensure it’s cooled)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon fresh, finely chopped
  • 1/4 teaspoon cayenne pepper (adjust to taste for spiciness)
  • Salt and pepper, to taste
  • 1 egg, beaten
  • Olive oil, for cooking

For the Hummus:

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 2 tablespoons tahini
  • 1 garlic clove
  • Juice of 1 lemon
  • 1/4 teaspoon ground cumin
  • 1/4 cup olive oil
  • Salt and pepper, to taste
  • Paprika, for garnish (optional)
  • Additional olive oil, for drizzling (optional)

Instructions:

For the Chicken and Rice Meatballs:

  1. In a large mixing bowl, combine the ground chicken, cooked rice, garlic powder, onion powder, chopped parsley, cayenne pepper, salt, and pepper. Stir in the beaten egg until well mixed.
  2. Form the mixture into meatballs, about 1 to 1.5 inches in diameter.
  3. Heat a few tablespoons of olive oil in a skillet over medium heat. Add the meatballs and cook, turning occasionally, until they are browned on all sides and cooked through, about 10-15 minutes. Be sure the meatballs have reached an internal temperature of 165°F.
  4. Once cooked, remove the meatballs from the skillet and set aside.

For the Hummus:

  1. In a food processor, combine the chickpeas, tahini, garlic clove, lemon juice, cumin, and a pinch of salt and pepper. Process until smooth.
  2. While the processor is running, slowly add the olive oil until you reach your desired consistency. Taste and adjust seasoning if necessary.
  3. To serve, spread the hummus on a plate, place the meatballs on top, and garnish with a sprinkle of paprika and a drizzle of olive oil, if desired.
