Ingredients:
- 1 medium head of cauliflower, broken into florets (about -600g)
- 1 egg, lightly beaten
- 3/4 cup shredded mozzarella cheese
- 1/4 cup grated Parm cheese
- 1/2 dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: a pinch of red pepper flakes for some heat
Instructions:
- Preheat Oven:
- Preheat your oven to 425°F (220°C). Place a pizza stone or a baking sheet in the oven as it heats up.
- Rice the Cauliflower:
- Pulse the cauliflower florets in a food processor until they resemble the texture of rice.
- Cook the Cauliflower:
- Microwave the riced cauliflower for 4-5 minutes to soften. Alternatively, you can steam it on the stovetop, then drain well.
- Squeeze Out Moisture:
- Allow the cauliflower to cool slightly, then transfer it to a clean kitchen towel. Wrap it up and squeeze tightly to remove as much liquid as possible.
- Combine Ingredients:
- In a mixing bowl, combine the drained cauliflower with the beaten egg, mozzarella, Parmesan, oregano, garlic powder, salt, and pepper. Add red pepper flakes if using.
- Form the Crust:
- Place the cauliflower mixture onto parchment paper. Press and shape it into a round pizza crust, about 1/4 inch thick.
- Bake the Crust:
- Slide the parchment paper onto the preheated pizza stone or baking sheet. Bake the crust for 12-15 minutes, or until it is firm and golden.
- Top Your Pizza:
- Remove the crust from the oven and add your favorite pizza toppings. Return the pizza to the oven and bake for 5-10 minutes more until your toppings are hot and bubbly.
- Serve:
- Let the pizza cool for a couple of minutes before slicing and serving.
