Gluten-Free Cauliflower Pizza Crust Recipe

Ingredients:

  • 1 medium head of cauliflower, broken into florets (about -600g)
  • 1 egg, lightly beaten
  • 3/4 cup shredded mozzarella cheese
  • 1/4 cup grated Parm cheese
  • 1/2 dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: a pinch of red pepper flakes for some heat

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 425°F (220°C). Place a pizza stone or a baking sheet in the oven as it heats up.
  2. Rice the Cauliflower:
    • Pulse the cauliflower florets in a food processor until they resemble the texture of rice.
  3. Cook the Cauliflower:
    • Microwave the riced cauliflower for 4-5 minutes to soften. Alternatively, you can steam it on the stovetop, then drain well.
  4. Squeeze Out Moisture:
    • Allow the cauliflower to cool slightly, then transfer it to a clean kitchen towel. Wrap it up and squeeze tightly to remove as much liquid as possible.
  5. Combine Ingredients:
    • In a mixing bowl, combine the drained cauliflower with the beaten egg, mozzarella, Parmesan, oregano, garlic powder, salt, and pepper. Add red pepper flakes if using.
  6. Form the Crust:
    • Place the cauliflower mixture onto parchment paper. Press and shape it into a round pizza crust, about 1/4 inch thick.
  7. Bake the Crust:
    • Slide the parchment paper onto the preheated pizza stone or baking sheet. Bake the crust for 12-15 minutes, or until it is firm and golden.
  8. Top Your Pizza:
    • Remove the crust from the oven and add your favorite pizza toppings. Return the pizza to the oven and bake for 5-10 minutes more until your toppings are hot and bubbly.
  9. Serve:
    • Let the pizza cool for a couple of minutes before slicing and serving.
