Gluten-Free Butternut Squash and Caramelized Onion Pizza

Ingredients:

For the Gluten-Free Pizza Crust:

  • 2 cups gluten-free pizza flour (your preferred brand, could be Schar, King Arthur, or another brand)
  • 1 cup warm water (around 110°F)
  • 1 packet instant yeast (approximately 2 1/4 teaspoons)
  • 1 teaspoon sugar

  • 1 cup butternut squash, peeled and thinly sliced
  • 2 tablespoons olive oil, divided
  • 1 large onion, thinly sliced

  • 1 cup mozzarella cheese, shredded
  • 1/2 cup crumbled goat cheese
  • 1 teaspoon fresh rosemary, finely chopped
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions:

  1. Preheat the oven to 425°F (220°C). Toss the butternut squash slices with 1 tablespoon of olive oil, salt, and pepper, and spread them out on a baking sheet. Roast for about 20 minutes until tender and lightly browned. Remove from oven and set aside.
