Ingredients:
- 2 cups gluten-free all-purpose flour blend
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cupalted butter, at room temperature
- 3/4 cup brown sugar
- 2 large eggs
- 4 ripe bananas, mashed
- 1/3 cup almond milk or other dairy-free milk
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts (optional)
Instructions:
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a bowl, mix the flour, baking soda, and salt.
- In a separate bowl, cream together butter and brown sugar. Add eggs one at a time, then banana, milk, and vanilla.
- Stir in the dry ingredients and walnuts, if using, until just combined.
- Pour the batter into the prepared pan and bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
