Gluten-Free Banana Bread

Ingredients:

  • 2 cups gluten-free all-purpose flour blend
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cupalted butter, at room temperature
  • 3/4 cup brown sugar
  • 2 large eggs
  • 4 ripe bananas, mashed
  • 1/3 cup almond milk or other dairy-free milk
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a bowl, mix the flour, baking soda, and salt.
  3. In a separate bowl, cream together butter and brown sugar. Add eggs one at a time, then banana, milk, and vanilla.
  4. Stir in the dry ingredients and walnuts, if using, until just combined.
  5. Pour the batter into the prepared pan and bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
