Basic Gluten-Free Bread
Ingredients:
  • 1 cup warm water (about 110°F/45°C)
  • 1 tablespoon sugar
  • 2 teaspoons active dry yeast
  • 2 cups all-purpose gluten-free flour blend
  • 1 teaspoon xanthan gum (if not included in your flour blend)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup olive oil
  • 2 large eggs
Instructions:
  1. In a small bowl, combine warm water, sugar, and yeast. Set aside for about 5 minutes, or until it becomes frothy.
  2. In a large bowl, whisk together the gluten-free flour blend, xanthan gum (if using), baking powder, and salt.
  3. Add the olive oil and eggs to the yeast mixture and whisk together.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined. The dough will be more like a thick batter than traditional bread dough.
  5. Transfer the dough to a greased loaf pan and smooth the top with a wet spatula.
  6. Cover with a damp cloth and let it rise in a warm place for about 30 minutes to an hour, or until the dough has risen to the top of the pan.
  7. Preheat the oven to 375°F (190°C).
  8. Once risen, bake the bread for about 35-40 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
  9. Let the bread cool for a few minutes in the pan, then transfer to a wire rack to cool completely before slicing.
