  • 1 teaspoon baking soda
  • 1 teaspoon gluten-free baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened (or coconut oil for dairy-free)
  • 3/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups gluten-free chocolate chips
Instructions:
  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the gluten-free flour blend, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, beat together the softened butter, brown sugar, and granulated sugar until creamy and well combined.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually mix in the dry ingredients until just combined. Fold in the chocolate chips.
  6. Drop dough by rounded tablespoons onto the prepared baking sheets, allowing space for spreading.
  7. Bake for 10-12 minutes, or until the cookies are golden brown around the edges but still soft in the center.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
